Ingredients

  • 4 cups Freshly Grated Carrots
  • 1/4 tsp Saffron
  • 2 tbsp Ghee
  • 1 cup Milk
  • 1/4 cup Condensed Milk
  • 3/4 cup Sugar
  • 1/2 cup Cashews
  • 1/2 tsp Cardamom Powder

Garnish

Preparation

  1. Add saffron in milk and leave for 15 min.
  2. Place a pan on medium heat.
  3. Add ghee until melted.
  4. Add grated carrots and cook for five minutes.
  5. Add sugar and cook until the moisture is gone. Taster after ten minutes. You should not get the taste of raw carrots.
  6. Add condensed milk and saffron milk and let it evaporate.
  7. Add cashews and cardamom powder.
  8. Heat until dry.
  9. Garnish with cashews and gold leaves.

Tip

Chose younger carrots as they are sweeter and do not have a wide core. The core is tasteless. Food processor is your best friend here. Pre-shredded carrots lack the taste and juice needed for the flavor.
