Ingredients
- 4 cups Freshly Grated Carrots
- 1/4 tsp Saffron
- 2 tbsp Ghee
- 1 cup Milk
- 1/4 cup Condensed Milk
- 3/4 cup Sugar
- 1/2 cup Cashews
- 1/2 tsp Cardamom Powder
Garnish
Preparation
- Add saffron in milk and leave for 15 min.
- Place a pan on medium heat.
- Add ghee until melted.
- Add grated carrots and cook for five minutes.
- Add sugar and cook until the moisture is gone. Taster after ten minutes. You should not get the taste of raw carrots.
- Add condensed milk and saffron milk and let it evaporate.
- Add cashews and cardamom powder.
- Heat until dry.
- Garnish with cashews and gold leaves.
Tip
Chose younger carrots as they are sweeter and do not have a wide core. The core is tasteless. Food processor is your best friend here. Pre-shredded carrots lack the taste and juice needed for the flavor.
