Egg Bhurji
Scrambled eggs with a twist of spices.

Ingredients
- ½ Red Onion or 3 cup
- 2 Tomato (should be same amount as onion) 3 Cup
- 2 tbsp Ghee
- 1 tsp Turmeric Powder
- 2 tsp Kashmiri Red Chili Powder
- 4 Green Chilies
- ½ tsp Garlic
- 1 tsp Ginger Paste
- ¼ cup Cilantro
- 2 tsp Pav Bhaji Masala or 2 Maggi Masala
- 8 Eggs (6 large eggs)
Preparation
- Place a pan on medium heat.
- Add ghee until it melts.
- Add onion, garlic and ginger until the raw smell disappears. Onions will be translucent.
- Add tomatoes, turmeric, Kashmiri red chili powder, green chilies and pav bhaji powder.
- Add eggs and cilantro.
- Stir continuously until eggs are nearly runny. (Eggs cook on the plate. Do not overcook or eggs will be dry).
- Garnish with fresh cilantro.
